  • Ellen asked me what I cooked that was healthy.  I gained these ten pounds because of my annual infatuation with dessert.  It starts with the Halloween candy, which I manage to avoid.  But all that discipline goes out the window when the pumpkin pie, bread, and muffins show up. I’m a sucker for anything like spice cake or gingerbread, too.  Once those dry up I turn to chocolate but it’s not my first choice and I usually move from the pumpkin to lemon.  I like lemon bars, lemon cheesecake, lemon meringue but just long enough to clear my palate and then I settle in with the chocolate.  I like chocolate pudding and chocolate cake.  Oh, and brownies. I give those each a whirl and about that time it’s Easter.  I have a candy store I favor and I always get extra toffee and caramel and truffles.  But I eat those sparingly as I am typically watching my figure and writing down everything I eat by then.

It doesn’t take me long to drop ten pounds because I actually prefer fruit and vegetables and the kinds of food we eat in the summer.  I quit with the bread and eat corn tortillas with humus and different goodies inside.  I skip the noodles and use a bed of lettuce.  But part of the transition is always soup.  I love soup.  I made minestrone yesterday and for dessert, carmeled apples.  I peel and slice thin a tart green apple and saute that in a little butter.  When it’s looking soft, I sprinkle cinnamon and sugar on top and let that caramelize.  I’ve used white sugar, brown sugar and syrup, and it’s all good.

  • I can’t eat chocolate, because once I start eating I can’t stop…on the healthy side, I love fruit. And soup -warm spicy winter soups like squash and mushroom.

  • Okay, now I am hungry.

  • Soup is my favorite way to get vegetables in my kids! And if I have some in the frig, I always have lunch available! I’m not a big snacker, which is a lifesaver. I’m having the hardest time with breakfast these days though. An egg and one piece of toast, with a glass of juice and coffee, is about perfect for me. But I don’t want to eat an egg every day and then things fall apart. I hate cold cereal and don’t really want to cook much.

  • I have to get out the bike myself. I have a semi-annual infatuation with buffalo chicken pizza. It’s so wrong. It is also hitting me that the first paragraph has me drooling. Yes, the bike comes out tomorrow!

ryc: It is so hard to let clutter not bother me. It worked for a night , but tomorrow I am going to be a tornado in this joint. Why are we so hard on ourselves for this type of stuff sometimes! I want that shift that you had earlier with the towels to happen to me right now!

  • I love soup.  I make a lot of stir fry and Asian foods.  But I am addicted to Mexican food and am just now learning to enjoy it without the cheese.  Sometimes I chocolate binge but only when I am eating too much meat. Judi

  • Is that your Brittany puppy? I have an older Brittany, named Brittany, I just love her. She is a lot of fun.

  • Sorry if I caused you alarm. I really don’t remember whose site I was on, but your post was the one before me and I noticed the Brittany Spaniel in the picture and thought since I have a Brittany Spaniel as well, that I would say hello. Have a nice evening.

  • Dancing……..ah I love it! It is the best and most fun way for me to stay in shape. I eat so simply most of the time that when I do eat wonderfully prepared foods…I moan an groan so much that I >almost< embarrass myself.  I can pass on most candy except when it comes to freshly made: chocolates,  rasberry truffles, peanut butter fudge, warm chocolate chip cookies and any fruit pies.  The carmeled apples sound yummy!

I am a vegetarian and I love to cook from the Moosewood cookbooks. I also love to go out to eat and here in Taos they have some of the finest chefs and restraints; I treat myself to two times a month.

I do a lot of dancing around these outings!

    Have a great day!

  • You describe carameled apple made me drool:) I can gain weight even eating just fruits! Thanks for your insightful comment.

  • My best friend from college is very seasonal about her food, too. In the summer, she really can’t eat anything heavy, and she loves fruits, vegetables, and a little chicken or fish. In the winters, she could live on bread and lamb and pie, but it doesn’t work when the weather gets frisky. I love to listen to your loves here. Giving up ice cream these past 40 days hasn’t been too much of a hardship at all, somehow. Neither has the alcohol. I’d say the toughest has been the coffee, which I didn’t think I had often but which is often found at my dad’s house or in the frozen treats I’ll randomly splurge on at work or the bookstore or what have you. Happy weekend, beautiful!

  • ryc: I have been mostly organic, diet soda is my addiction I admit it. I have found some varieties of organic soda, but they are all more expensive than I can handle right now. But this is fast becomming iced tea season anyway. I have just brewed three pitchers for the week. All organic. You know, I never thought there would be such a difference in my system by going organic as much as I have. But boy, there is a huge difference. Now whenever I ingest too many chemicals (fast food mainly) I get ill. Many times I can’t keep it down. But I feel so much better otherwise. During tea season I am going to hunt for some diet organic soda alternative. You’ve inspired me!

  • Yes, I am in the USA.

  • ryc: HA! That is great! I’d like to say you have inspires me yet again, but it’s early and I’m not likely find that just sitting on the shelf.

  • Have mercy….such deliciousness.

  • RYC Honestly nothing wicked there…least I don’t think…but speaking of wicked I made a wickedly royal lemon pie this evening and I’m too tired to eat any….

  • I just ate and now I am hungry again….

  • RYC: I have no idea why the subscribing thing isn’t working. Now I’ll have to make sure I comment everytime I post something!  You missed the dance one… ;)

  • Another lemon lover, eh? I just bought these delicious lemon thins cookies at Trader Joes, and have to discipline myself not to eat them all in one sitting. Mmmm. Dessert will be the death of me.

  • I too have a weakness for anything pumpkin, but I can’t blame my extra weight on seasonal eating.  I just need much more exercise than I typically get.  I like your carmelized apple idea.

  • spice or carrot cake with cream cheese frosting..mmm:) I’m hungry now too!
I only wish I could say I liked veggies…for me, its pasta and bread:)

  • I’m putting on weight my own self, but at least I know what I have to do.  What’s been going on is, at work I have trouble resisting the frozen mocha drinks at the coffee bar in the ER where I often have to work the back end of a 16-hour shift.  And I can’t resist saying “yes” to “Do you want whipped cream with that?”  What’s worse, the coffee lady often brings me a freebie, and I can’t resist drinking those, too.

The least I can do — the very least — is to stop buying any.  Saying no to a freebie?  Now THAT’S tougher.
