  • Ohhh, yeah.  Coconut oil is some goooood shit.  I opened the jar and was hit with the same sensation I had upon opening my first coconut.  But I was a kid so I guess it wasn’t “I.”  It said to use 1 T and in that I sauteed one carrot, one half of a yellow onion, and 1/2 of a large, red bell pepper, all sliced.  Actually I put the carrot in first, with a cut-up chicken breast and then added the rest.  When it was almost cooked I put in a couple cloves of garlic and salt and pepper.  Then I added 1/2 T curry powder, let that brown and deglazed with enough chicken stock to make a very thin sauce.  I had some leftover, cooked noodles and threw those in to absorb the stock and let that simmer a few minutes.  The noodles thickened it a little and absorbed most of the stock.  This isn’t good enough to save as a recipe but it gives you an idea of how to use it.  Normally, I use flour and milk with a curry but I’m trying not to use milk these days.  I’m going to try yogurt next time.  The important discovery I made tonight was how good the coconut oil was with the curry.  I’ve never had curry taste this good.  The two marry and become a third taste.


    About olive oil.  Anam asked, and I will tell you what I read.  Extra- virgin olive oil is 78% mono-unsaturated fat, with 8% poly- and 14% saturated.  It is unrefined and high in antioxidants and polyphenols that decrease the bad cholesterol (LDL) but don’t decrease the good (HDL).  It should not be stored near the stove as it will go rancid.  Get your pan hot first, and then pour the oil in and immediately get the food in there.  It’s best to buy “cold pressed.”  Don’t get “light.” 


    Olive oil is low in omega-3s, though, so I am going to try using canola and get organic, which is less refined.  You can get it hot, it’s bland, it’s cheap, and it has a longer shelf life.  It must taste bad. 


    The walnut oil I bought and was so excited about I didn’t know I was supposed to refrigerate.  Even in the fridge it only lasts three months.  It’s almost as high as flaxseed in omega-3s, though.  But flaxseed oil can take no heat.  Have you ever tried drinking that stuff?  Blech!

    i’m probably the only one with Jamaican heritage who HATES coconut oil…although i love the milk from a green coconut and the “meat” once you chop it in two with a machete  i also cook everything in canola oil, so i don’t even remember what corn oil tastes like any more, so i have no mode for comparisson

    my sisnlaw had her and her family on some kind of cranberry and flaxseed system purge diet…just sounded icky

  • I love when people do the homework for me. *smile*  I actually found myself looking up the health benefits of black eyed peas.  Since they are a personal favorite (oh, no…I never lived in the South! lol), and I’d been craving them, I thought I’d see if I could justify the carb count.  Turns out my answer is Yes, to my satisfaction. ::big grin::

  • Pru, lots of information on Omega 3, thanks for the easy read of it.  I take 2000 units of Cod Liver Oil a day in capsules, 3 times a day for my menopause symptoms, which I must confess it is doing a good job of controlling the hot flashes! later Marilyn

  • avacado, especially hass, or florida avacados, are also very high in omega 3′s – they are eaten daily by my 14 month old twin grandchildren, vegans, they are, in lieu of fish oils, some of which are contaminted with toxins accumulated in the fatty fish, as some choice toxins are soluable only in fat, and won’t rinse out, either….

    thai, lao, vietnamese, south indian, burmese, khmer, lots of other tropical places use cocoanut as the basis for green curries… i like the sound of what you’ve done with yours, pru, it inspires me.

    my live-in maid/housekeeper in bangkok loved to bake, thought i should entertain more so she could stay in better practice.  at least once a week she whipped up a cocoanut mirangue pie, having cut up the cocoanut herself and it was heavenly, truly, as was every single dish she ever made. 

    in india, women oil their hair with cocoanut oil….   lot of milage out of those cocoanuts…

  • Dang, I threw out a small vial of coconut oil that I had been using as an underarm deodorant (it works fantastically, actually, and doesn’t have the smell of lavender oil) because I was allergic to it (& sigh, the lavender caused a rash too)… so back to store-bought stuff. Seriously, a woman wrote into NOW Mag in TO about using coconut oil…. oh, sigh. Love you kiddo.

    The burritos I love are at Pioneer Courthouse Square (do people call it Pioneer Courthouse Square or just Pioneer Square? I call it Pioneer Square, but I don’t know.) on the lunch cart thingie. They have been there 10+ years. All the other carts down there have come and gone but the burritos have stayed the same and they are sooooo good but not exactly authentic Mexican food. I have tried to replicate them in my own kitchen but can’t. It’s the mix of the flavors that make is so good.

    On coconut oil, I love it and it’s smell. The recipe sounds so good!
    I like using olive oil too. Once when I was out of eye cream , I even dabbed some around my eyes. It was sticky! Like Vitamine E oil is .

    What is the nana thing? A storyline?

    Anyway, I missed all my xanga freinds, im glad to be back on comuter!

  • RYC: About Dave/rattlesnake incident.  Shoot this is dozens of times but usually he is on a horse or far enough away that he can see them.  The have driven cattle on range acres for almost 112 years in his family so he grew up with this.  He is 48 by the way.

  • We do use coconut oil for hair by itself or after adding a few herbal extracts. It makes the skin soft too. It is also used in cooking, mostly by the people living  in coastal areas and also in the southern parts of India,  where coconuts grow  in abundance. 

  • mmm, going to have to try coconut oil with the curry. I usually use coconut milk with the curry- or no milk at all with a bit of fish sauce for a curry stirfry, starting out with browning the curry in olive oil… Everyone loves it.

  • Hey!  I just dropped by to say hello.  I see we post comments at a couple of the same sites.  So sorry to hear about your daughter and the scaulding tea incident.  Hope she feels better soon.  There’s no pain like burn pain.  OUCH.
